Basically each day, you want to use more calories than you get. It's a simple logic.
However you should have one day each week where your calorie intake is higher than what you use though, because the body will accustom to certain fixed amount of eaten calories. Like lets say you are on a diet to loose weight.
My advice for going down in weight is eat often but little and run cardio in the morning on empty stomach.
