whats the difference between regular and behind the neck movements? ex. lat pull down, shoulder press

For most people it's worse. If you've got the shoulder flexibility to do it comfortably it won't make much of a difference though.

alot of moves are pretty terrible on your shoulders and kneck. not all of them are but alot of them arent too. behind the kneck extensions arent that bad if your smart.

sometimes I do behind the neck pullups but that's it for behind the neck

it is, your riskin injury on your rotator cuff, mabo's right though, if your flexible then it wont be a big deal, but if your bigger and mobility tough, dont do any behind the neck movements at all...build your shoulders up with other exercises such as extensions and shoulder press, varying exercises to keep your muscles guessing, personally i dont like to do anything behind the neck, feel a strain everytime i perform one so i stopped...get the same pump and workout by doing shoulder exercises in front of me or so the side.
