Working with a barbell has the benefit of a lateral stabilizing effect between your arms whic dumbbells do not as they are independant of each other. Although you are lifting both at the same time and theoretically the movement is the same, more than likely there will be slight nuances between the way you lift each one due to strengths and weaknesses within each arm.
