You can take more than 3 shakes a day, I remember Lee Priest saying in an article, there is no replacement for food, but shakes were the next best thing, if you can't eat food have a shake. Personally for me, I am on the road a lot and I don't have time to be eating, so I keep about 4-5 shakes with me throughout the day (1 of them is a fast digesting weight gainer I use for post workout) so 4 normal shakes for during the day. I also eat breakfast, lunch, dinner and if I can get another meal in I will, but I have to have at least 8 servings of protein a day. Now since I use lbs as a weight of measurement this is how I generally determine calories for weight gain. Bodyweight x 18-20 (for you since you burn alot I would go with 20) and that should give you your calorie consumption for the day. Now you are going to want to take in about 2 grams of protein per pound you weigh and about 3-4 grams of carbs. You also want to make sure 10% of your calorie consumption is good fats (omega 3's, fish oils, cod liver oil, flaxseed oil, etc...). Since you have long times between meals/shakes a good slow digesting weight gainer would probably work best for you, something like ON ProComplex Gainer or BSN TruMass, they digest slower and give you the calories you need, ON has more calories though, so that would help you a lot more.
