And have been off for 3 days

I'll be hitting the gym in about 6 hours

Is it worth starting to take in protein now and after??

Or should I take another day off (today/no protein intake day), and start eating protein first thing in the morning and start working out tomorrow again??

You should always incorporate protein into your diet for the day whether you've been off for a couple days or not. Your body grows when you're resting, not when you're in the gym and taking in protein on your off days is just as important as on days when you're in the gym. Honestly, other some slight tweaking pre and post workout, my diet stays constant whether I'm training that day or not. Consistancy is key.

My advice:

Eat a high protein, low glycemic meal immediately and then drink at least 18 oz water. Go do it right now...

After 1-2 hours do it again and repeat, do this until about 90-120 min before you workout

After your workout get in about 75-100g carbs with 50g of protein and consume it gradually within hour. Then eat real food and hour later

Yes, because you have to replace glycogen stores in your muscles; just don't go crazy with them. Even High GI carbs are okay, but you sort of have to play around for a bit to see how much you can take in while still cutting at a reasonable rate. Post-workout is actually the time to take in simple carbs, so enjoy it. lol
