Ingredients per serving:

1 sliced green pepper;
1-2 chopped + peeled carrots;
2 sticks of celery - sliced and chopped;
Handfull of mangetout;
1 - 2 average sized potatoes.

Preparation time 7 mins
Cooking time 7 mins

How to cook :

Firstly, microwave your potatoes around 5minutes wrapped in kitchen towel will do the job, in the meantime start preping your veg,

Cut the pepper in half strip it of the seeds and start slicing down from top top bottom so you get about 6 slices from each side roughly.
Peel the carrots and then chop into it like you do for a sunday lunch.
Get two sticks of celery cut down the middle and slice like you do on the carrots.
Mangetout simply tae a handful out.

Once the potatoe has finished cooking in the microwave, cut it in half (length ways) and then slice it like potatoe fritters.
Place the potatoes on the wok and add some mixed dried herbs on top of the potatoes, (allow to cook for a few minutes). Now add your vegetables for 5 minutes so it cooks through.

This is enough to fill a bowl up.

Alternatives to add to it:
  • Add chicken
  • Fahitja wraps
  • Noodles

Its a simple and cheap meal to make.
