Sweet Potato Spears
Preheat oven to 400f.
Scrub exterior of potatoes clean (leaving skin on).
Slice potatoes in half, lengthwise. Cut each half in half, lengthwise. Repeat until spears are the thickness of steak fries.
Plase spears in 1 gallon zip log bag, add 1T Olive oil, 1T chopped fresh rosemary & .5t sea salt, for each potato used (1T, 1T & .5t for one, 2T, 2T & 1t for two, etc.)
Seal & shake bag, coating all surfaces well.
Pour spears out on foil-lined cookie sheet or shallow roaster, and arrange in single layer.
Bake for 15 minutes, reduce heat to 325 & continue to bake for 15 minutes or to desired doneness.
