Sweet Potato Spears

Preheat oven to 400f.

Scrub exterior of potatoes clean (leaving skin on).

Slice potatoes in half, lengthwise. Cut each half in half, lengthwise. Repeat until spears are the thickness of steak fries.

Plase spears in 1 gallon zip log bag, add 1T Olive oil, 1T chopped fresh rosemary & .5t sea salt, for each potato used (1T, 1T & .5t for one, 2T, 2T & 1t for two, etc.)

Seal & shake bag, coating all surfaces well.

Pour spears out on foil-lined cookie sheet or shallow roaster, and arrange in single layer.

Bake for 15 minutes, reduce heat to 325 & continue to bake for 15 minutes or to desired doneness.

I just pop a whole one in the microwave and add light margarine, LOL! Im too simple I guess.

Here one recipes for you:

Ingredients for Sweet Potato Pie Recipe

* 5 medium sweet potatoes, cold boiled and diced
* 1/2 cup sugar
* 1 cup milk
* 1 egg, beaten
* 2 pie crusts

Instructions

1. Boil milk with the sugar.
2. Mix in the sweet potatoes and beaten egg and let stand until cool.
3. Line pie plate with pie crust.
4. Pour in the sweet potato mixture.
5. Wet the edges of the under crust, cover with the upper crust, and press the edges slightly together.
6. Bake at 350 degrees for about 25 minutes.

my mom makes the marg cinnimon one^ but thats mashed also with a bit of honey and salt and pepper.

i never really liked them growing up but right now im addicted. i just washed them stick them on a pan and roast them for about 45 min. they carmelaize..so good. then you can make wraps outta them.

sprouted grain wrap
roasted yam
sprouts
red pepper
chicken
yogurt
lettuce
fresh cilantro

little chilpote tabasco if you like that smokie hotness
anything optional
its a wrap so anything really.

also caramelized onions with balsamic viniger goes really good with yam anything.

basicall what i do is i bake a whole bunch then when i need them ill pop one in the microwave smash it and add some natural peanut butter to it and a little cinnamon

usually i just wash them then cut them small leaving skin on, boil water an stick them in, they take bout 17 mins so thats good for time
