This is pretty dense, so one piece may fill you up, but it's easy to scale up. Recipe makes 1 piece, just double everything for 2 etc.
1 Slice Wheat Grain Bread (slice & dry out the day before) [Recipe under separate thread]
.25 c egg whites (or yolk of 1 large egg)
1 T fat free half & half or fat free coffee creamer
1 pack sugar substitute (Equal)
1 Touch vanilla
1 sprinkling nutmeg
1 heavy sprinkling cinnamon
1 t Olive Oil
1) If bread is not completely dried out, place in 200f oven right on oven rack to dry completely.
2) Place egg white, sweetener spices & vanilla in wide bottomed bowl & whisk to combine.
3) Add fat free creamer & continue whisking to emulsify.
4) Place dried bread in mixture, then turn to coat other side.
5) Let this sit until the bread absorbs as much liquid as possible (It should all go in, but you can always pour any remainder over toast in skillet)
6) Heat oil in skillet over high heat, then reduce heat to med-hi.
7) Place saturated bread in skillet (in single layer if cooking more than one) & reduce heat again to a high medium. Cook for about 3 minutes, or until just golden brown (it will burn quickly at too high a heat & you have to start over, so keep an eye on it).
8) Turn toast, reduce heat again to low medium or meduim low & continue to cook until steam stops rising out of bread. This is how you know that it's done.
9) Serve immediately, with topping of choice.
