These aren't the best tasting, but when you gotta have protein & don't have time to prep, they're easy to grab out of the freezer.

1 C Old Fashioned Oats
.5 C Flax Seeds
.5 C Sunflower Seeds
2 Scoops Chocolate Protein (I use ON Supreme Chocolate Casein)

2 T Peanut Butter (I use natural - ground peanuts only)
1 Pear (or apple)
Dash Cinnamon
Mini-dash Nutmeg
2 Eggs
.5 t Vanilla Extract

Preheat oven to 350f.

Grease 9x7 glass pan (I use olive oil - sub Pam if u like).

Combine dry ingredients in medium bowl with whisk.

Grate Pear into micro safe bowl, add Peanut butter & spices, then microwave for 30 second interfuls until peanut butter is smooth enough, (but not too hot) then mix well.

Add eggs, one at a time, then vanilla & pour into dry ingredients & combine.

Move mixture to prepared ban & smooth evenly.

Bake 25 - 30 minutes until sides begin to pull away from pan (tester inserted in center will come out clean).

Cool in dish, on wire rack.

Slice into desired portions (6 portions = < 400 Cal per).

Once completely cooled and sliced, I store in individual zip-locs, inside a larger zip-loc in freezer

Break down (based on approx 110g bars):

Prot = 20g
Carb = 30g (fiber = 9g, sugars = 4g)
Fat = 20g (sat = 3g, tran = 0g)

Although kind of high in fat, still a good source of fiber, and extremely low Glycemic Load estimate (6). Much better for you than a happy meal!

I used to have one that used bananas instead of either the sugar or the fat - I can't remember. It was tucked into a cookbook somewhere & now I can't find it. I did, however, try to make up two sweet treats to satisfy the brownie craving. One tastes better, but isn't so healthy. The other is healthy, but doesn't taste so hot. I'll post them under separate threads.
