My diet consists of all the typical things you'd see on a clean bulk:

Various amounts of:

Rice
Oats
Whole Grains
Sweet Potatoes
Avocados
Salmon
Chicken
Beef/Steak
Whey and Casein

with various veggies and some fruits as well.

Here's my issue. Because of time constraints with college courses, it's impossible for me to eat every 2 hours or so. I'm stuck with eating a max of ~5 meals a day, with perhaps a snack tossed in there. I'm finding it very difficult to surpass 3500 calories, much less 4000 (my goal).

Any tips? Are there foods I'm forgetting, or should I find some creative way to eat more often?

Stop making excuses lol.I go to college, workout for 2 hrs,do cardio for 2-3 hours and take care of my three kids yet i still manage to eat 6 times a day.
Just throw in 1 more shake at the end of the day if you only have 1 or 2 now.Easiest thing to do is to make you some homemade protein bars or cookies so you can have a quick one or two between classes

See that's what I need...some new way of eating on the fly. I'm not about to whip out smelly food in the middle of class but a cookie/bar is plausible. Any recipe links?

I'd consider the shake thing, but I haven't been able to find any good shake that has more than just protein. A protein shake will give me about 170 cals at the most, which is hardly helpful. I tried Optimum Nutrition's Serious Mass but it screwed with my stomach.

I'm on Complex Pro Gainer by ON right now. Strawberry flavor, 620 cals, 85 grams of carbs and 60 grams of protein in one scoop. Take it with a few ounces of water on the go. It's great for a replacement meal.

2 scoop of whey -48g protein
2 cups of grind ed oats-100g carbs
2 tbs of Pb 16g fats

takes seconds to down it about 1000 Cal's you can reduce it if its to much much cheaper than a weight gainer and you know whats exactly in it.

Any other nut butter (sounds so wrong) that's worth trying? I'm allergic to peanuts :(

Also, do you grind the oats yourself or can you buy them ground?

just throw them into a food processor/ blender and do it yourself. You can put almonds in your shake and just grind them with the blender.

Almond butter and cashew butter are way good!!!! Since your bulking a almond/cashew butter sandwich is right up your alley. Make sure to use the good stuff when choosing bread.

Yeah I've found some really solid bread that's great (whole grain with nuts, really dense).

Ezekiel bread is really good stuff...It's 12 grains, sprouted, so it's higher in nutrients than normal bread...

Yeah dude self made gainers are the way to go...I like the disgner whey isolate( its new) its 60 grams of protien 100 precent isolate, 2 table spoons flax oil, 1 cup of oats, 1 table spoon of honey and 1 bananas...there's only one store bought gainer that gets my money made by a.d.s. No maltodextrin.. they use pea and almond protien.. very smooth easy on the the stomach.. loaded with healthy fats and 910 cals mixed with water!!!

You could also add more carbs to your post-workout meal, and you could drink some carbs during your workouts.

Shakes, bars, fruit, sandwiches, wraps, anything portable!

Tbh, I could not hit 4000kcal without a little bit of cheating....I managed 3600kcal clean but I was full constantly, even with swapping many meals for liquid shakes.

Yeah, I'm trying to avoid that, but we'll see. I actually don't need to get to 4000, just about 3600. I know if I set my goal to 4000 I'll work harder for it.

I ended up trying a homemade shake:

2% Milk (2 cups)
2 servings oats
2 scoops Optimum Nutrition Whey (chocolate)
1 Giant glob of natural peanut butter (with honey)

Added up to ~900 cals, and tasted pretty dang good if I do say so myself.

I blend 3 cups of oatmeal and 16 oz of whole milk in the blender, it comes out to about 1,200 calories and for me who is not able to eat a lot at once, I can drink it down easy, it comes out to about 1 1/2, 16 oz glasses full.

Do you just use plain oats?

I'm going to have to get a fine strainer, my blender can't get rid of alot of the oat chunks. Pretty gross feeling in the mouth I must say.
