I've personally never cooked with it before, so any ideas on meals for brown rice would be appreciated.

one negative thing i find about brown rice is that it takes the piss to cook!!! but i mix it with some scrambled egg whites some frozen pear and spring onion and then serve with talapia fish and walaa!

I like to do a brown rice bake.. I take about 10-15 servings of brown rice (about 400-500 grams of carbs) and 6 or so chicken breast. I first chop the chicken up into 2 oz portions, so cut the breast into 2-3 peices or how every big it is. Partially cook the chicken in the pan. Then I add the rice and liquid, such as chicken broth or water (if you are worried about salt content use water) and a couple of cans of cream of mushroom soup. Don't use to much liquid or else it will be to soggy. I put this is a large baking pan and put it in the oven on 325F for 30-35 mins or I just do it in a gigantic pan on the stove.

Start making this is small portions first, so you can judge how much liquid must be added. I usually do it in a huge pan on the stove top.

Add herbs and spices if you want, but other than that it has ALOT of flavor and I personally could just eat it all the time.

for chicken i just use ready made marinades, make sure that they are free from colurings and all the bad stuff etc

Is anyone else here unsatisfied with Himalayan Pride brown rice? I bought a ten pound sack of it at Costco, and when I cooked it, it tasted weird. It tasted like it was picked while it was raw, and it wasn't tender. The brand I like is Mahatma brown rice.

Does anyone else feel the same way?

I've taken to eating brown rice a lot lately, though I can't remember what brand, sorry... but I do have a good meal that I love to whip up. One very important thing to start, make sure your rice is already cooked (and chicken too)!!!

Make the serving size as appropriate, DO NOT overload the pan.

Using a frying pan, mix together:
Rice
Olive oil (If you didn't already add it when making the rice)
Spinach
Snow pea pods (it auto put a link in for PEA?)
Almond slices
Sliced chicken

You can pretty much add in anything else you want. I'm a fan of mushrooms and sunflower nuts so I toss those in too. But basically just keep the heat low and cook it all up. If you like cooked spinach, turn the heat up a tad more so it cooks the way you like it, it can take a long time to cook on low. Hope you try this out and enjoy it!
