1 pound turkey tenderloins
1 (8 ounce) can tomato sauce
3 tablespoons cider vinegar
2 tablespoons water
2 tablespoons molasses
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon dry mustard
1/8 teaspoon celery seed
1/8 teaspoon onion powder
1/8 teaspoon ground red pepper
12 small red potatoes, halved
4 medium yellow squash, cut into pieces
Directions: Remove skin from turkey and cut into 1-inch pieces. Combine tomato sauce and next 8 ingredients in a shallow dish and stir well. Add turkey and stir to coat. Cover and marinate in refrigerator for at least 30 minutes, stirring occasionally. Cover potatoes with water in a saucepan and bring to boil. Reduce heat and simmer until crisp-tender, about 8-10 minutes.
Remove potatoes from heat, drain and allow to cool. Alternately thread turkey, potatoes and squash on to 8 skewers. If using wooden skewers soak water for 30 minutes to prevent burning. Spray grill rack with non stick cooking spray and heat to medium heat. Place kabobs on grill and cook, turning and basting frequently, until turkey is no longer pink in the center, approximately 15 minutes.
