Egg whites last how long?

I was wondering if anyone has ever just separated a ton of eggs into the whites and kept that in the fridge? If so how long? I dont really want to buy the cartons of egg whites because of preservatives.

nope... good ol fashioned crack and separate here.... not a bad idea tho ... but i got no idea how long they will last.... if the egg whites you buy say to use them(after opening) within a week (i think) maybe somthin along the lines of that?

i keep half empty milk cartons in my bedroom until the milk inside it goes deep green...

I recommend that you just keep the eggs intact, until you want to use them.
If you crack them open, you're going to introduce microbes which will cause the eggs to spoil a lot faster.

I usually cook a couple cartons of eggwhites at a time with a bag of chicken, mix that shit together and fridge it for breakfast all week.

I can tell you from experience tho, that they keep for about 1 week, uncooked after opened

The cartons should be pasteurized, so they keep a long time. FYI, the pasteurization process also breaks down the biotin or avidin (can't remember which) making the protien bioavailable even when uncooked.

Doesn't matter if you're cookin 'em, but if you're adding them to shakes, you've got both protein and bacterial concerns covered.

I know that you can keep hard boiled eggs in the fridge for a week. When I was in college I spoke to some of the cooks there and they keep 'em for a week.

I just read this recently, and I believe the safety guidelines for refrigerated eggs are as follows:

In the shell, they're good for five weeks past the expiration date.
Crack them open, and they're good for two days.

Forget that! To make life easier, and to pump-up my protein drinks, I add (per the label) 3/4 scoop of Healthy 'N Fit 100% Egg Protein to give me an additional 24 grams of pure protein. I get the stuff at VitaminShoppe, and it is really excellent. 24 servings cost ~$18 USD. It is actually 100% pure egg whites in powder form with some vanilla flavor added.
