You're a big man - you should look pretty damn good when you cut up if you've been training right!
As far as cutting the weight - the best way is probably the most obvious - cut down your calories, but mainly from carbs - you don't want to be cutting down your protein intake. Keep training how you are for size, but add more cardio to your schedule. Maybe once a month do a lighter weight/higher rep routine in stead of heavy. Cardio - maybe 3 times per week (or more if you can handle it) try and get pretty high intensity on the cardio.
Fairly basic, but that's the main thing ! I'm sure others will have some ideas too!
