If you can afford it, therapy should do a world of good.
Emotional issues suck and are really hard to deal with, I know. Fear of returning to a state of being that caused you torment will be with you forever if you let it.
But like others have said, start small. Where ever she's at now with foods, just increase SLOWLY and just make sure your goals aren't too high. All you have is time and in time you'll make progress.
I might suggest set up a reward system where she does good on some things so then she can do something she really loves to do. I don't know, like eat that big meal and then she can play the Wii for 30 minutes or something. You get the idea I hope. Something like that is good for people that need a little break in the routine or just a little push.
